Healthy Nut Bars

2 C.  Pecans

1 1/3 C. Walnuts

1 1/3 C. Sliced almonds

1/3 C. Pumpkin seeds

1/3 C. Sunflower seeds

23 Dates

1 C. Liquid egg whites

1 1/3 t. Vanilla

2 T + 2 t. Cinnamon

Preheat oven to 350 degrees.

Put sliced almonds, sunflower seeds & pumpkin seeds in bowl.  Coarsely chop 1/3 C. walnuts and add to bowl.  In NutriBullet or food processor grind 2 C pecans, 1 C walnuts and 23 dates.  (Layer the dates and nuts so the dates don’t stick to each other.  Do not do all of this at once.  Grind one cup of nuts with 7-8 dates at a time.) Add the nut/date mixture to the bowl.

Add cinnamon and stir.

Mix egg whites and vanilla together then add to bowl and stir completely.

Cover large cookie sheet with parchment paper.  Spread & smash mixture evenly onto cookie sheet.  Cook at 350 for 17-18 minutes.

Let cool and cut into bars.  Makes 16 bars.

I put each bar in a snack size baggie, freeze them and grab one a day on the way out the door.  Delish!

PS.  You can also add hemp seed, chia seed, flax seed or anything your heart desires.  🙂
